Very Veggie Spring Rolls
Ingredients

1 ripe Avocado
1 Cucumber
1/2 Yellow and / or Red Pepper
1 Carrot
2-3 Green Onions
Red Cabbage
Sesame Seeds
Spinach and / or Cilantro
Coconut Aminos or Braggs Liquid Aminos
Organic Rice Paper

Directions

Julianne all fruits and veggies and set aside.
Boil 1 cup of water and place in shallow dish for dipping Rice Paper... the directions on my package of rice wraps suggests soaking each wrap for 10 to 30 seconds, that usually does the trick :)

  • Lightly shake off the excess water – Before placing them on your work surface
  • Lay hydrated rice wraps on a hard/sturdy surface – I suggest laying them straight onto your counter.
     

Lay the julienned vegetables down in the middle of the wrap. I like to fill mine with a little bit of spinach or something green, parsley or cilantro are always a tasty addition.

Keep the fillings laid neatly, making sure to leave ample room on each side to easily fold the wrap, then fold and roll the wrap and set aside until they are all completed.

Optional Toppings

You can use the Coconut Aminos and add a bit or Wasabi to spice it up or we recommend trying our Tzatziki Sauce for a light fresh (and tasty) change of pace. Either way you can't go wrong!

Add mango to the mix for a sweet addition.

Notes

These Spring Rolls are light, super satisfying, and they can be customized to your liking. This is a great way to eat tons of fresh produce. Enjoy!
