Practically Raw Almond Milk Yogurt
Ingredients

- 4 cups of almond milk

- 4 tablespoons of arrowroot powder

- 1/4 cup of yogurt starter culture or probiotic capsules (about four tablespoons).

However, following the instructions provided with your specific yogurt starter or probiotic capsules is essential for the best results.

- A food thermometer

- Clean glass containers with lids

- A heating pad or a warm place to keep the yogurt OR a yogurt maker with glass jars

 

Directions

1. Pour the almond milk into a pot and heat it over low heat, stirring constantly. Use a food thermometer to monitor the temperature and ensure it doesn't exceed 115 degrees Fahrenheit max.

2. Once the milk reaches the desired temperature, remove it from heat and add two tablespoons of arrow root powder. Stir well to dissolve the arrow root powder.

3. Heat the mixture over low heat, stirring constantly, until it returns to temperature. Reduce the heat and let it sit for 5 minutes, stirring occasionally.

4. Remove the mixture from heat and let it cool until it's warm to the touch.

5. Add your yogurt starter culture or probiotic capsules to the warm milk and stir well.

6. Pour the mixture into a clean container with lids and cover them.

7. Place the container on a heating pad or in a warm place, such as an oven with the light on, for 8 to 12 hours. I also like using a yogurt maker with glass jars that do not exceed 115 degrees. The longer you let it sit, the tangier it will become.

8. After the yogurt has set, refrigerate it for at least 2 hours before serving.

Enjoy your homemade almond milk yogurt, and check the low-temperature settings on your heating pad if you decide to use that option. Most only go to 110 degrees, but again, you will need to investigate that.

If you want to avoid using arrow root there are other vegan thickeners that you can utilize to make almond milk yogurt. One option is to use tapioca starch which is both gluten-free and vegan.
