Apple, Almond & Cranberry Oat Bites
Ingredients
1 1/2 cups Rolled Oats
2 cups Oat flour
1 tsp. Cinnamon
1/4 tsp. Sea Salt
2 tablespoons organic Almond or Macademia Butter
3 oz. Coconut syrup or Agave syrup
2 cups Apple grated (use with juice & peel)
2/3 cup coarsely chopped Almonds
2/3 cup fresh Cranberries
1 Carrot (optional)
Sesame Seeds (optional)
Directions
- Place 1 1/2 cups oat flour and rolled oats into a large bowl, add cinnamon and salt and mix well.
- In a separate bowl add the almond butter.
- Using a spoon or a whisk incorporate the coconut syrup into the almond butter a teaspoon at a time at first.
- Add to dry ingredients and mix well.
- Add grated carrot
- Add grated apple with juice (mix using a mash and drag motion to mix in the clumps).
- Add cranberries and almonds and mix well.
- Sprinkle a plate with the reserved oat flour and drop dough into it, if the dough falls apart or sticks to the palm add some flour to the dough about a tsp. at a time.
- Roll and shape into balls.
- Place in a dehydrator. Time depends on how thick and how crunchy/chewy you desire 2 to 4 hours.
Optional Toppings
Sprinkle with coconut flakes or roll in a mixture of sesame seeds and / or shaved almonds.
Notes
These are great for children and adults alike. Have a couple with a cuppa and enjoy the moment.
