Shaved Brussel Sprouts Salad
Ingredients

Salad Ingredients:

Brussel Sprouts (1 pound or about 5 Cups)
Pomegranate Seeds
Dried Cranberries or Dried Cherries
1 Honey Crisp Apple
Walnuts, Pine Nuts, or Sliced Almonds

Dressing Ingredients:

1 Orange (juice and some zest)
1/4 Vidalia or any Sweet Onion
2-3 Medjool Dates OR 2 Tbsp Maple Syrup (depending on preference)
2 Tbsp Apple Cider Vinegar OR Juice of 1 Lemon
1 Tsp Pumpkin Seeds
1/4 Tsp Cinnamon

Directions

With a large sharp knife, trim off the stems, cut the Brussels in half lengthwise, then place cut side down on the board and finely shred the sprouts.
Place in a large bowl and toss with lemon juice, salt, and pepper to taste. Set aside while you prepare the dressing.

In a good blender combine all the dressing ingredients and blend until smooth, add salt and cracked black pepper to taste.

Place Brussel Sprouts into a large bowl, chop the Apple into small bite-size pieces, chop or break the walnuts by hand. Toss all ingredients together and then pour some dressing on top, toss again and enjoy!

Optional Toppings

Toss in some chopped parsley as a garnish.
