Sun-Kissed Lemon Date Pepper Dressing
2 Stalks of celery
1/2 Red bell pepper
Juice of 2 large lemons
8 Medjool dates or 10 smaller dates
4 Tbsp hemp seeds
2 Tbsp tahini
2 Sun dried tomato
6 - 8 Tbsp water (depending on how thick you like it)
Add lemon juice and half the water into the blender first, then add the bell pepper. Next add all the other ingredients into the blender, and pulse for a few seconds. Then blend up normally until all ingredients are incorporated, and it is smooth and creamy! Add remaining water to desired consistency. I like this one on the thicker side!
If you like things a little spicy add a small piece of habanero pepper for a change!
Or try some dried herbs, a tsp. of parsley or cliantro make a delicious change!
This drizzle / sauce / dressing recipe is super versitile and can be used as a dip for veggies, on tacos or as a creamy thick addition to any salad!
