Vegan Citrus Ginger Slaw w/Broccoli, Cabbage and Carrot
Slaw:
Broccoli(chopped fine or julienne)
Cabbage (shredded)
Carrot (julienne or peels)
Mandarin Orange (optional)
Dill Weed(for garnish)
Dressing:
1/4 Lemon (peeled)
1-inch Ginger (peeled)
medium Red Bell Pepper (chopped)
Mandarin Orange (peeled)
small handful Basil
Shred some cabbage (napa works equally as well). Finely chop some broccoil florets AND/OR use a julienne slicer for the broccoli stalks if desired. Then julienne or peel some carrots, and add all ingredients into a large bowl. Use your own discretion as to how much of each ingredient you would like to see.
Add all dressing ingredients into a high-speed blender. I chop the red pepper into chunks before adding it to the blender. Then blend on high until all ingredients are smooth. Pour over the bowl of cabbage, toss well and then add some Celtic sea salt and cracked black pepper to taste. Enjoy this refreshing and healthy summer salad!
Save a few broccoli florets or basil leaves to add to the top as a garnish. You can also slice some apples as a crunchy sweet garnish as well. Sprinkle a little Dill on top for color!
