Healthy and Delicious No-Fat Vegan Salad Dressing
Ingredients:
- 1/2 cup of chopped cucumber
- 1/2 cup of water
- 1 small garlic clove
- 1 small lemon, juiced
- 1/4 tsp of salt
- 1/4 tsp of black pepper
- 1 tbsp of nutritional yeast
- 1 tbsp of Dijon mustard
- Salt and pepper to taste
Instructions:
1. In a small mixer add all the ingredients but the water and salt and pepper. Blend until thourougly mixed.
2. Start adding the water a couple of Tbsps at a time until you get the desired consistency, I usuallly add two and then mix again.
2. Taste and adjust the seasoning as needed, add Celtic sea salt and cracked fresh black pepper at this point.
3. Serve immediately or transfer to a jar or container and store in the refrigerator for up to 1 week.
