Raw Vegan Mac & Cheese
4 zucchini
1 cup raw almonds, soaked 8 hours
3/4 cup almond milk
1/3 cup of nutritional yeast
2 tbsp lemon juice
1 tsp lime juice
1/2 tsp smoked paprika
1/2 tsp sea salt
Cracked black pepper to taste
Spiralize zucchini and then cut short like macaroni. Sprinkle the zucchini macaroni with salt and set aside for 30 minutes to get some of the water out, rinse before adding sauce to remove excess salt and water.... pat zoodles dry with paper towels.
Blend remaining ingredients in high speed blender, add the sauce to zoodles and garnish with fresh parsley and Braggs Sprinkle 24 Herbs & Spices
1/4 tsp cayenne pepper If you like a little spice! Add more to taste!
Cracked black pepper does work well in this recipe ,even if you are not a big pepper fan, try a little.
